How to Make Applesauce

  1. Start with 1 peck of apples (about 10 lbs.).
  1. Wash and peel apples.
  1. Remove apple cores and cut into chunks. Place in 6-quart saucepan. Fill pan to level top with apples. Apples cook down about 50% or ½ in saucepan.
  1. Add 1 cup of water and ½ to 1 cup of sugar (as desired sweetness) or no sugar if desired.  Cover with lid.
  1. Select low to medium heat on stovetop.  Stir and check frequently. The applesauce can burn.  You can add more water or sugar if desired.
  1. Cook about 45 to 60 minutes or until apples are cooked down. Stir to smooth.

7. Enjoy. Refrigerate in air tight container. Can be frozen in freezer containers.

Other applesauce flavors:  Add 1 - 2 tsp cinnamon with the water and sugar.

                                              Add pkg cinnamon red hot candy with only water

 

Winter Squash 

 

Winter squash are a tasty source of complex carbohydrate and fiber that are relatively low in calories.  They are a source of potassium, niacin, iron, and beta carotene. Winter Squash varieties can be stored for use throughout the winter.  We grow lots of squash on our farm.  Come out and try some new recipes!

 

The pumpkin patch grows a variety of squash.  These squash can be oven baked or placed in the microwave. Usually microwave in a glass dish and use high power.  They are quick and easy to prepare.  Follow the directions below and microwave the squash about 10 to 15 minutes and then add the toppings/seasonings and microwave another 5 to 10 minutes.   Enjoy! 

 

Baked Acorn Squash  (looks like an acorn-green)

Wash the squash.  Cut in half.  Remove seeds.  Place on baking dish cut side down.

Bake about 30 minutes on 350 or microwave till soft. Then add the following to the inside of squash.

Add:  1 1/2 Tbsp. butter (cut up)

Sprinkle with 1/4 cup brown sugar.  Sprinkle with salt and pepper to taste.

Bake 350 for another 10 to 15 minutes or microwave to softened.         

 

Butternut Squash (cream colored)

Wash the squash.  Cut in half.  Remove seeds.

 Then place on baking dish cut side down.  Bake 30 minutes on 350 or microwave on high till soft.

Add:  1 1/2 Tbsp. butter (cut up)

Sprinkle with 1/4 cup brown sugar.  Sprinkle with salt and pepper to taste. Bake or microwave till softened.

 Butternut Squash

 

Cushaw (large necked-green/white striped) 

Wash and peel squash.  Slice or chunk into pieces.  Place in baking dish.

Add:  1 1/2 Tbsp. butter (cut up)

Sprinkle with 1/4 cup brown sugar.  Sprinkle with salt and pepper to taste.

Bake 350 for 30 to 40 minutes.

Can be used like pumpkin for pies, muffins, etc.

 

 

Spaghetti Squash (smooth oval-cream)

Wash squash.  Cut squash in half.  Remove seeds.  Place on baking dish cut side down

Bake about 30 minutes on 350.  Then add the following to the inside of squash.

Add:  1/4 c Parmesan cheese, 2 Tbsp butter, garlic salt or minced garlic, and salt/ pepper to taste. Could serve with a meat sauce.

Bake 350 for another 10 to 15  minutes.  Can be microwave.
